Cooking Instructions
In the kitchen
- Mix the venison mince, pancetta, Worcestershire sauce, salt and pepper in a bowl. Divide the mixture into 4 and using the Weber burger press shape your patties.
At the barbecue
- Prepare the barbecue for direct heat, approx. 220°C. If using a 57cm charcoal barbecue you will need 1/2 chimney starter of lit Weber® briquettes.
- Place the GBS Dutch oven lid griddle into the circular recess on your cooking grate and pre heat.
- Add oil to the hot griddle and fry off the mushrooms stirring continuously.
- Finish by adding the butter and allowing it to melt into the mushrooms.
- Remove and place in a small bowl, add truffle oil chopped chives and salt to taste. Place the burger onto the griddle, put the lid on and allow to cook for 2-3 minutes before turning.
- Check to see if the burgers will self-release from the griddle and flip. Before putting the lid back on add two slices of cheese on top of each burger.
- Cook for a further 2-3 minutes or until cooked through. If you are using a temperature probe, ensure the core of the burger has reached 68ºC. Remove and rest for 2 minutes while you cut and toast the buns.
Assembling in the kitchen
- Serve with whole grain mustard, top with hot mushrooms.
