Serves: 4 people
Ingredients
- 4 Pigeon Breasts
- 1 tbsp Chopped Mixed Herbs - Thyme, parsley and rosemary
- A pinch of Sea Salt
- 5 tbsp of wood chips
- 2.5 tbsp light brown sugar
- 1 bag of mixed rocket, watercress and baby spinach.
- A dozen hard-boiled Quails Eggs – you can buy them already hard boiled from waitrose the ultimate cheat! All you really need to do is boil them for 3 minutes and put them into ice-cold water and peel them – it is as easy as that so no real excuse for buying Waitrose cheats version.
Dressing
- 500ml Extra Virgin Olive Oil
- 150ml Balsamic Vinegar
- 75ml Red Wine Vinegar
- 100g Raspberries
- 2 tsp Dijon Mustard
- 1 tsp Sugar
- Pinch of Salt and Pepper

Method
Using a pestle and Mortar put a small amount of olive oil with the sea salt and herbs and mash together. Massage this into your pigeon breasts and put into the fridge for at least an hour – the longer it is left to marinate the more flavor it will take on from the herbs.
Whilst the pigeon is marinating prepare your smoker. Using a wok line it with a double layer of foil and put your wood chips and the brown sugar on top. Then using a small cooling rack or something similar to put your pigeon breasts on whilst smoking so they don’t sit directly on to the wood chips.
Put your wok on the heat and allow it to start smoking and put your pigeon breasts on top and put the lid on smoking it for 10 – 15 minutes an till the pigeon is just cooked. Take out and allow them to cool and refrigerate. Then make your dressing …
Mix all your ingredients with hand blender and taste you might need to add a little more sugar depending on how tart your raspberries are.
Now assemble your salad and enjoy.
