The Game Meal Revolution

The Game Meal Revolution

We all know how vital it is that we don’t waste food, and in the game shooting industry this is especially true. Using the game that we shoot is one of the most important justifications for our sport, as well as the fact that it is free-range and healthy. And quite apart from all the worthy reasons, it’s delicious. However, shoots can become frustrated by the fact that game dealers offer very little financial recompense for pheasant and partridge, and many guns have little time and no suitable space for dealing with birds in feather. So what is the solution?

Many shoots and some individuals are taking a new approach, one that not only promotes game to a wider public, but also one that will offer a great return, both for the good name of game shooting and financially. An increasing number of prepared game dishes are finding their way to an ever-broader market.

The Country Food Trust

Conceived in 2014, The Country Food Trust is the brainchild of Tim Woodward. In its first year, 2016, the charity produced more than 20,400 meals, and that increased to 100,000 meals in December 2017. The concept is simple: for every one of its delicious, readymade meals, the Trust distributes one to someone in poverty. The two meals available are The Country Casserole, made with pheasant and The Country Curry, a partridge curry.

The Game Chef

Tom Godber-Ford Moore has been working with Loyton Sporting, one of Exmoor’s most prestigious sporting clubs, and to date has produced more than 2,000 lunches for those lucky enough to go shooting there. During the close season, however, Tom continues to use game, producing a delicious range of rillettes, salamis and burgers, as well as setting up stall at events such as The Game Fair, where he sells fantastic burgers, pheasant wraps and goujons.

Wild And Game

Steve Frampton joined forces with Michael Cannon recently to produce value added game products in a non-profit organisation. The ambition is to bring game to a wider audience and to help shoots serve game on shoot days. Already with seven products on offer, in the way of game pies, game pasties and pheasant sausage rolls, Steve’s hoping to expand the range and reach of Wild And Game over the forthcoming years and to extend the appeal of the products to the non-shooting community through selling in pubs and farm shops.

The Wild Meat Company

Established in 2000 in Suffolk, The Wild Meat Company is the leading online consumer site for game meat in the UK. The company was started by Robert Gooch with Paul Denny, a butcher, with the aim of improving the marketing for game meat, making it easy for consumers to order oven-ready products. Robert is a passionate game shot, and was determined to bring game to a broader audience. All the game is sourced locally, with the exception of grouse and is sent for next day delivery around the country. The website is fresh looking, with useful recipes, tips and tricks for cooking game, and as well as the oven-ready game, there are three-bird roasts, ballotines and roulades for incredibly easy cooking, diced mixed game for pies or stews, as well as plenty of other free-range meat such as chicken, lamb and pork. The company also sells some of the more unusual game such as wild boar and squirrel.
