I am sure that many of you have started seeing your freezer’s filling up, or will do over the coming weeks as you take a brace or more home from a day out in the field. We are blessed in the UK to have access to such wonderful wild meat. At GunsOnPegs we have all been trying out new recipes since August and would like to share with you our favourites that we have made this season.
One-Pot grouse
My favourite recipe so far this year has definitely been the One-pot Grouse with Chorizo and New Potatoes recipe that was provided to us by the British Game Alliance. The combination of the grouse, spicy sausage and waxy potatoes having soaked up the juices from the meat is delicious and the herbs and lemon that you stuff the bird with come through perfectly. It could also be made using partridge if you cannot get hold of grouse and using only one pot saves time on the washing up!

Talking of partridge, Alex, our newest member of the team, says that his favourite game recipe this season has been a ‘Spicy Partridge Noodle Dish'. It is incredibly easy to make and if you marinade the partridge breasts the night before takes no time at all. If, like Alex, you love spicy food, sprinkle some sliced red chilli and coriander on top to give it a fresh kick.

Game canapés and snacks
Digby’s pick of Pheasant Scotch Eggs is perfect for elevenses or a hot or cold snack. Having been laughed out his local super market when requesting which aisle to find the quail’s eggs, he substituted them for small hen’s eggs but recommends a thinner layer of sausage meat. Digby suggests a sweet chilli sauce to go with it.
On the theme of elevenses, George has chosen this Pheasant and Chorizo Sausage Roll recipe from the Countryside Alliance which he substituted with partridge due to a more accurate early-season display by the guns on his family's farm shoot than expected. George’s advice to me was… make lots!

Chris’ pick was another British Game Alliance recipe, in the form of a Pheasant and Leek Gnocchi Bake. Chris says that you could equally trade the gnocchi for pasta, but that this cheesy dish was the perfect winter warmer, when you want something indulgent but quick to put together!
I hope that one of the above recipes gives some inspiration to try something different this year or perhaps to introduce a friend to game by gifting them a brace of birds with a recipe. I find that most things that you cook with chicken you can substitute with pheasant and partridge by just changing the cooking time of the meat. We would love to hear what your favourite game recipes are, and if you have good quality photos to accompany them, it would be great to share them with our members.
